Rigatoni with almond pesto and stracciatella

INGREDIENTS (FOR 4 PERSONS)

250 g Rigatoni “Pastificio Marella”
150 g almonds
1 shallot
1 clove of garlic
30 g pecorino romano
100 g stracciatella
as required vegetable broth
as required salt and pepper
as required organic extra virgin olive oil

PROCEDURE

  1. Blend the almonds with oil, garlic, pecorino cheese.
  2. Pour the mixture into a pan and add the cooking water.
  3. Cook the “Pastificio Marella” rigatoni in boiling salted water.
  4. Stir in the “Pastificio Marella” rigatoni with almond pesto and stracciatella.

PRESENTATION

Serve the “Pastificio Marella” rigatoni with almond pesto and stracciatella on a plate.
