Rigatoni with almond pesto and stracciatella
INGREDIENTS (FOR 4 PERSONS)
250 g Rigatoni “Pastificio Marella”
150 g almonds
1 shallot
1 clove of garlic
30 g pecorino romano
100 g stracciatella
as required vegetable broth
as required salt and pepper
as required organic extra virgin olive oil
PROCEDURE
- Blend the almonds with oil, garlic, pecorino cheese.
- Pour the mixture into a pan and add the cooking water.
- Cook the “Pastificio Marella” rigatoni in boiling salted water.
- Stir in the “Pastificio Marella” rigatoni with almond pesto and stracciatella.
PRESENTATION
Serve the “Pastificio Marella” rigatoni with almond pesto and stracciatella on a plate.
